DIY Coconut Butter

As I was strolling through the grocery store, I was taken aback at how expensice coconut butter was. Not even organic types were over $12 for less than 400ml. Since I started using it, I always made it myself because it's both incredibly easy and inexpensive to make, plus it only take about 20 minutes from start to finish. 

Vegan "Crab" Cakes

Parties frome are all about the food. I'm not big on huge gatherings anymore, but I love any excuse to make food for anyone. The best part for me is being in the kitchne all day and then seeing people enjoy it all. What can I say, I love feeding people vegan food so that they can see that it's not all salads and carrot sticks. Although, I do love me a nice fresh crisp carrot.

To me, the best part about any celebration is the food. It's what brings people together. My family always tends to hang out in the kitchen anyways, so having some great food to celebrate coming together is a must.

Roasted Tomato Salsa

Experiencing the rainy season here is interesting. Some days it threatens to rain all day, but not a drop. Other days it's bright and sunny in the morning, then turns dark and gloomy pretty quick. Today is one of those days. Planning hikes and fruitlucks isn't obvious at this point, but we are risking a beach day on Saturday to hangout with a few fruities in the area. I'm crossing my fingers that it'll be sunny!

Mexican Lasagna

As our adventure time here in Costa Rica is fast coming to a close (only 5 weeks left!), I'm attempting to take advantage of this place to the best of my ability. Waterfalls, beaches and fruit will be through-fully experienced and enjoyed.
