Spring is definitely in the air now, at least here in Vancouver it is! All the flowers are blooming and the air and sun are warm during the day and satisfyingly chilly at night. This means that casseroles and hearty dishes like this Sweet Potato Shepherd's Pie are still very very welcome in the cool evenings. This dish is a delightful twist on the classic I grew up eating. Although it had very different ingredients, this still reminds me of evening with my family as a kid.
Sometimes I just get a block, I had a super successful cooking day ast week, but somehow the week slipped away from me in regards to blogging. I find that after Vegan Month of Food's crazyness, it takes a little while to get back into the regular schedule. But no I am determined to get in on all the fall goodness. Sometimes, cimplicity wins over anything else. I'm currently completely rebuilding my pantry and I've had moments of really appreciating simplicity. When you start from scratch,it's easier to really see what you need versus what you want. Plus, my body is happy about all the extra veggies and greens I'm eating as a result! Especially after doing Vegan MoFo, a simple salad recipe is just what I wanted.

I had a bit of a struggle this past week putting posts up. I ran out of my ahead of time made recipes and with the whole moving deal, I got a bit overwhelmed. But now I am back and ready to finish off Vegan MoFo 2014 with my full 20 recipes.
I like to keep it really simple most days, and Wednesday posts is where I really want to showcase how eating very simply can be amazingly delicious and satisfying.
