Sometimes you just need a simple dinner that doesnt take too much time or effort. The stir fry is the ultimate fast and easy dinner since you can make the sauce in the same pan as the bulk of the meal, with some rice simmering away in the next pot. This particular recipe is a rainbow of vergetables with a simple and quick sauce that all comes together quicker than the white rice accompanying it.
How time flies! I haven't posted in awhile, mostly due to the increased efforts I've been putting towards the launch of a personal chef service here in Vancouver. I'm getting SO close to being totally ready and I'm excited (and scared) beyond anything to be doing this. I have a few cooking classes ready to be advertized and will be making annoucements soon as to a schedule and all that. Sometimes, cimplicity wins over anything else. I'm currently completely rebuilding my pantry and I've had moments of really appreciating simplicity. When you start from scratch,it's easier to really see what you need versus what you want. Plus, my body is happy about all the extra veggies and greens I'm eating as a result! Especially after doing Vegan MoFo, a simple salad recipe is just what I wanted.

I'm actually pretty impressed with the smoothness of Vegan MoFo 2014 for me so far. I've been having quite a hectic week what with work, packing, last minute appointements AND getting a cold on top of it. To be honest, I cant wait for the move to be done and I am not looking forward to a week without my usual computer setup and all. I'll probably have to pre-upload most of my blog posts the night before As I wont have access to 2 computers during work hours anymore.
