Spring is definitely in the air now, at least here in Vancouver it is! All the flowers are blooming and the air and sun are warm during the day and satisfyingly chilly at night. This means that casseroles and hearty dishes like this Sweet Potato Shepherd's Pie are still very very welcome in the cool evenings. This dish is a delightful twist on the classic I grew up eating. Although it had very different ingredients, this still reminds me of evening with my family as a kid.
Gah it's been too long! I was going quite insane with my grant applications and other things involving the personal chef launch things that I just completely forgot to blog. Bad blogger! I also had to bring in my laptop (AGAIN) to get fixed for what I sincerely hope is the last time. So now I can really focus on getting back in the at-least-twice-a-week blogging habit. Summer and BBQ sauce are things that go hand in hand for me. I always liked things drowning in sauce, and with BBQ sauce and pulled Jackfruit, it's supposed to be that way.

I've come to realize that making otherwise non-vegan friendly comfort foods into healthy vibrant dishes is sort of becoming my thing. I'm loving that I can eat all these things without a deep-fryer, excess salt and all that jazz. That being said, I don't really want to box this blog into just being that one thing.

Thai food has always been on my list of favorites, but for a few reasons, it isn't in my habitual repertoire of go-to recipes or restaurants. The primary reason being that plenty of restaurants use fish sauce in, well, everything and some places won't or can't make their dishes without it. So finding a good, authentic and fish-sauce-free restaurant can be tricky. Nevertheless it is no excuse not to enjoy the delicious flavors that Thai food has to offer.
