Lasagna has always been one of my favorite meals. Ooey gooey layers of sauces, noodles cooked to perfection and the crispier corner pieces were always a cause for excitement. Now I've made the perfect vegan, gluten free and low fat lasagna that I just keep coming back to, even when I tell myself I'll try a new recipe this time when I buy the noodles.

It's always funny to em to hear people talk about how complicated being vegan must be, when really it's so simple and affordable. This Butternut Squash based Mac and Cheese can be made any time of year and is less than $8.00 for a full emal that can feed 3-4 adults. It's also gluten free, soy free and nut free, so pretty much everyone can enjoy regardless of food allergies.
Boy am I happy it's October. Not only for the obvious reasons of jumping into Fall recipes full of comfort and delicious, but also because The whole moving accross the country deal is over. Although we are just in a temporary place until december, local moves have nothing on the long distance kind. Nothing at all.

Today marks the official one year birthday of Plates for Plants! To mark this very special occasion, I am sharing a recipe thatI have been holding onto for a few months now. It's just so amazing and delicious that I had to wait for a special occasion such as today to share it with you.
There is no doubt in my world that soup is the ultimate cold weather food. Seeing as fall has sunk its toes into the ground, and winter is peeking from behind the clouds, I figured now was the perfect time to post this recipe. It used to be a constant in my world this time of year last year, I'm pretty sure I made it at least once every two weeks, always a batch that lasted me a few days.
