Sometimes, cimplicity wins over anything else. I'm currently completely rebuilding my pantry and I've had moments of really appreciating simplicity. When you start from scratch,it's easier to really see what you need versus what you want. Plus, my body is happy about all the extra veggies and greens I'm eating as a result! Especially after doing Vegan MoFo, a simple salad recipe is just what I wanted.
Sometimes, there are recipes that are meant for later posting. Mostly because there are 5-6 in line before it... But then they are just too good not to share right away! This potato salad recipe reminded me exactly of the one I used to make that was full of mayo and eggs. It's kinda creepy actually...

Fresh and vibrant are my two favorite words when it comes to food. I mean, there are a million words with which food can be described, but when a dish is made of pure fresh and alive ingredients, it just resonates with me. The way it tastes combined with the amazing feeling of fresh foods is incomparable.

As our adventure time here in Costa Rica is fast coming to a close (only 5 weeks left!), I'm attempting to take advantage of this place to the best of my ability. Waterfalls, beaches and fruit will be through-fully experienced and enjoyed.
