Simply Delish Soup and Salad Co. Review

I met the lovely gentlemen that owns and operates SImply Delish Soup and Salad Co with his wife at my local farmer's market here in New Westminster where I had a stall advertizing the Secret Dinner Club. He was so nice and talked to me about how his products were all transitionning to being plant-based and gluten free, that by the end of the summer, he'd be 100% transitionned. This is defnitely something that is great to hear!

He was super gracious and offered me one of his products to try out. He gave me his best seller and instructed me how to make it. Let me tell you, it was definitely a hit for dinner last night! The Mulligatawny Soup was amazing, extremely flavor full and low in sodium to boot. It's a curry based soup with a plant-based chicken stock, lentils, split peas, rice and dried vegetables. 

What they make is super simple and conviniently packaged soup, with all the dry ingredients in the packaging. With this one all I needed to add was some potatoes (I put about 3x the recommended amount) and it said an apple and currents, but all I had was raisins. Then after an hour of simmering while I did other stuff, I added a can of coconut milk and a tbps of lemon juice. I did thicken it a bit with a bit of flour but thats just a personal preference because I like thicker soups. It was promtly devoured by myself and the 3 men of the house. 

I love these kinds of products as they are made with whole foods, take little to no active cooking time, although they cook for about an hour and 20 minutes. This means you can relax or tend to other things while supper is making itself, maybe a stire now and then. Definitely check them out at one of the many farmer's markets in the area or on their website.
