So as usual, I have changed my mind a bit on how I want to continue Vegan MoFo, I just decided to not post on Sundays because to be honest, I'm getting a little overloaded with things to do and that gives me just enough extra time to relax and have everything pre-prepped for the week.

Although I didnt really get much cooking done this weekend, we went and got the rest of our stuff out of storage and started sorting everything on Saturday and Sunday was some much needed social time with old friends. However, I do actually already have a few recipes done for this week, which is awesome, meaning I won't have to rush tonight after work to make 5-6 recipes.

This juice is great for so many different reasons. Beet juice has been proven to help athletes with recovery and performance. Some people don't find it that appealing on it's own though. It's very earthy and sweet on it's own so I like to pair it with other vegetables instead of fruit to balance out the flavors. 

This is a great recovery drink to have after a workout, paired with some fruit it gives you a ton of phytonutrients, carbs and water to stay on top of your game and help your body recover from your workout.

Ingredients:

  • 2 large beets - washed
  • 1 lbs carrots
  • 4 stalk celery
  • 1 large lemon - peeled

Directions:

  • Prepare all your vegetables into pieces that will fit through your juicer. I recommend pacing the celery in between other vegetables sot hat the strings dont clog your juicer (depending on which one you use) I have a Omega slow juicer and it sometimes has issues with stringy vegetables.
