Since our weather is still holding more or less steady with warm summery breezes and sunshine, I figured my first soup post for VeganMoFo2014 would work best as a raw food recipe. Raw soups are extremely versatile and usually easy tomake if you have a good blender. I took the longest time before actually trying to come up with my own recipes. The first time I tried to make one, it was pretty disastrous to be honnest. Both the testure and taste were not appealing at all. So I put it on the back burner until my 4 month raw stint last yeat, in the middle of winter of course. I needed something warm!

So I pulled up my sleaves and just tried it again. Surpirisingly I came up with a few delicious recipes that I still use now! Having a high speed blender like a Vitamix or Blendtec definitely makes making raw soups easier and a shorter process. I like my soups very smooth, but if you prefer some texture, just blend it a little less and chill to get everything rehydrated. Mine came out a little bubbly on the pictures because I didnt stir it at all after it came out of the blender, didnt affect taste or texture though.

Raw Garden Tomato Soup

A quick and easy raw soup recipe that is great cool or slightly warmed in the blender.

Ingredients:

  • 2-3 large tomatoes - roughly diced
  • 1 stalk celery
  • 1-2 cup carrot juice
  • 1/2-1 cup sundried tomatoes
  • 1 stalk green onion - sliced
  • 10 cherry tomatoes - halved
  • 1/4 cup basil - loosely packed
  • s/p - to taste (opt)

Directions:

  • Throw in all the ingredients into the blender except the basil. Blend like crazy until smooth. Taste and adjust ingredients to personal preference. If too runny, add sun-dried tomatoes, if too thick, add water.
  • Pulse through the basil until chopped and distributed.
  • Enjoy!
