Heart of Palm Avocado Salad

Sometimes, cimplicity wins over anything else. I'm currently completely rebuilding my pantry and I've had moments of really appreciating simplicity. When you start from scratch,it's easier to really see what you need versus what you want. Plus, my body is happy about all the extra veggies and greens I'm eating as a result! Especially after doing Vegan MoFo, a simple salad recipe is just what I wanted.
This salad takes about 5 minutes to pull together, even with making a very simple dressing. I've been all over the hearts of palm since we were in Costa Rica, I am planning on using them regurlalry from now on. They are super versatile, as you can see in my heart of plam Crab Cakes. I've also made tacos and sanwich fillings with them and they are amazing (coming soon!)
If you can find fresh hearts of palm (I miss them so much from our time in Costa Rica), then use those instead of the canned variety. Make ure to rinsed the canned ones very very well to remove as much of the salt as possible.
