Easy Mac and Cheese


I simply cannot believe that I've never posted this recipe. CANNOT. This had been the go-to recipe for fast, easy and simple mac and cheese in any household I've lived in since going vegan. It has followed me from Ottawa to Vancouver and everywhere in between. It takes less time to make the sauce than it does to cook the pasta. It's rich and satisfying while being healthy as. If that's not a winner I don't know what is!

Now, this is a nutritionnal yeast containing sauce, which is something that I love but if you are just starting out it has a very cheese-like taste, but it;s very much it's own thing. Try it out or you can even add whatever vegan cheese you have on hand to the basic recipe to make it your own kind of cheesy.

Easy Mac and Cheese

Minimal ingredient and ready as fast as you can cook pasta, this recipe has been a staple of mine for over 5 years!

  • 1 package brown rice pasta
  • 1 1/2 cup non-dairy milk - I used coconut, but for a low fat option use soy or rice
  • 3/4 cup nutritional yeast
  • 2 Tbsp flour
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 2 tsp turmeric
  • Salt and Pepper - to taste
  • 1 splash liquid smoke - (opt)


  • Cook the pasta according tot he package.
  • While that magic is happening, whisk together all the other ingredients, except the toppings. Heta over medium heat while whisking frequently until thick and bubbly.
  • Toss together the pasta and sauce, then serve with steamed veg of choice and maybe a little coconut bacon.
  • Enjoy!
