DIY Coconut Butter


As I was strolling through the grocery store, I was taken aback at how expensice coconut butter was. Not even organic types were over $12 for less than 400ml. Since I started using it, I always made it myself because it's both incredibly easy and inexpensive to make, plus it only take about 20 minutes from start to finish. 

This recipe makes 3/4 of a liter and it keeps for a very long time in the cupboard. You can choose to keep it in the fridge, but it get really hard and you'll have to melt it in a hot water bath everytime you want some. In the winter, that'll be a necessity either way though since coconut's melting point is 27 degrees Celsius.

I love using coconut butter instead of any oils in baking recipes, it still gives them a rich taste with a much lower fat content and keeps your recipes whole food. Try it out in brownies, smoothies, cookies and banana bread.
