Chickpea Flatbread

Sometimes, I really try to imagine what we did before the internet. Although I was pretty young when we got our first dial-up connection, I remember information being so much ahrder to find and access. Now, thanks to this magical technology, discovering new food is as easy as looking at your instagram feed. That's where I found out about Socca or Chickpea Flatbread. There are many different cusisines that have their own recipe for it and it's already gluten-free!

I've been missing bread like items lately and finding a commercial brand that is easily accessible OR a bakery nearby that makes vegan and gluten-free breads is not an easy task for most. There are a few bakeries around here that I haven't checked out yet but there is also the question of cost, since a loaf is never less than $7. I want something good, cheap and easy to make, since baking isnt my forte. In comes this chickpea flatbread! I even make a pizza crust variation of it that will make an appearence in a following post.

This "bread" is slightly dense but has that great crumbly crunchy texture that I love. We've had it with cabbage rolls, spaghetti and stews. Since it's incredibly easy to change the seasoning in this, the sky is the limit. This one is a garlic-parsley version that goes great with pasta.


Garlic Chickpea Flatbread
A lovely and easy flatbread recipe made with chickpea flour and loads of garlic.

Ingredients:
- 1 cup chickpea flour
- 1 cup water
- 2-4 garlic cloves - minced
- 3 Tbsp parsley - minced
- 1/2 tsp salt
Directions:
- Pre-heat oven to 400F.
- In a large bowl, mix the water and chickpea flour until well combined. It will be a lweeter batter but don't worry, it'll firm up in the oven. Stir in the garlic, parsley and salt.
- On a parchment paper lined baking sheet, pour the batter and spread out evenly.
- Bake for 15-20 minutes until the sides begin to brown.
- Let cool and cut into squares.
