Root Vegetable Casserole

How time flies! I haven't posted in awhile, mostly due to the increased efforts I've been putting towards the launch of a personal chef service here in Vancouver. I'm getting SO close to being totally ready and I'm excited (and scared) beyond anything to be doing this. I have a few cooking classes ready to be advertized and will be making annoucements soon as to a schedule and all that. Pumpkin Chili

Chilli is by far one of my all time favorite things to make. It's also incredibly easy to make a HUGE batch and then eat it all week or freeze for later. Although, it only lasted 2 days with the appetitites I have floating around here...

Boy am I happy it's October. Not only for the obvious reasons of jumping into Fall recipes full of comfort and delicious, but also because The whole moving accross the country deal is over. Although we are just in a temporary place until december, local moves have nothing on the long distance kind. Nothing at all. 

Heart of Palm Avocado Salad

Sometimes, cimplicity wins over anything else. I'm currently completely rebuilding my pantry and I've had moments of really appreciating simplicity. When you start from scratch,it's easier to really see what you need versus what you want. Plus, my body is happy about all the extra veggies and greens I'm eating as a result! Especially after doing Vegan MoFo, a simple salad recipe is just what I wanted.
