Baked Onion Rings - They're Fat-Free!


I've cracked it! First with my Hot Cauliflower Wings, now with these onions rings. A batter that requires zero oils or fats to crisp up beautifly in a hot oven. I have many many plans for this. Most definitely will be serving variations of these to people would join our secret dinner parties (more info coming soon, but you can sign up for the mailing list here.)

Feel free to use any kind of onion you like, I only had red ones on hand but I think these would be AMAZING with Vidalia/Sweet onions. Just adjust the cooking time if you use big rings. 

Just imagine the possibilities: on burgers, stacked high in a tower o' rings, as a side to some awesome pulled jackfruit sammiches...

Does it show that I'm excited about these. I'll also be trying a bread crumb verson of these soon and report back on their outcome. Also, feel free to change up the seasonings, I love the colour turmeric brought to these but it can easily be ommited for a more traditional look. 

Baked Onion Rings

A classic made healthy, what more could you ask for?

  • 1 large onion - peeled
  • 3/4 cup all-purpose GF flour
  • 1/4 cup chickpea flour
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp garlic powder
  • S/P - to taste
  • 1/2 cup water - up to 1 cup


  • Pre-heat oven to 415F
  • Slice your onions into even rings and pat them dry.
  • Make the batter by combining all the other ingredients, adjust the water if its too thick, add flour if too thin.
  • Coat the rings evenly and place them on a parchment paper lined baking sheet. Pop into the oven for about 20 minutes, or until crisp and just starting to brown. Let cool for a few minutes.
  • Serve with your favourite sauce or eat as is!
  • Enjoy!
